What You’ll Need

  • Olive oil (or any cooking oil you have)

  • 2 chicken breasts, diced (cheaper in bulk—freeze the extras!)

  • 1 TBLS minced garlic (fresh or jarred)

  • 2-3 red & yellow bell peppers, chopped

  • 1 packet Great Value fajita seasoning (affordable & packed with flavor)

  • 1 ½ cups rice (long grain or basmati—buy in bulk, rinse before cooking)

  • 1 can diced tomatoes (cheaper & easier than passata)

  • 1 can black beans, drained

  • 1 can canned corn, drained

  • 2 cups chicken broth (adds flavor & ensures the rice cooks perfectly)

  • ½ cup cheese (mozzarella or cheddar, optional but delicious)

  • Salt & pepper to taste

  • Sour cream & Tabasco (for serving)


How to Make It

  1. Cook the chicken – Heat olive oil in a big pan. Add diced chicken and cook until golden. Toss in minced garlic, bell peppers, and fajita seasoning.

  2. Add rice & liquids – Stir in the rice, diced tomatoes (with juices), black beans, corn, chicken broth, and seasoning. Let it simmer—this is when the magic happens!

  3. Mix & simmer – Stir occasionally and let everything cook until the rice is tender. If it looks dry, add a splash of water or more broth.

  4. Cheese it up – Sprinkle cheese on top (if using) and let it melt.

  5. Serve it up – Dish it out and top with sour cream and a dash of Tabasco for extra flavor.
